цу, у меня что-то не задалось с tgtd.nix.
вот мой конфиг к нему:

services.tgtd = {
    enable = true;
    targets = [
      {
        iqn = "iqn.2020-06.pxe:ROOT";
        stores = [
          {
            path = "/dev/sdb";
            lun = 1;
          }
        ];
      }
    ];
  };

и вот что говорит tgt-admin -s

Ну в логах после последнего ребута чота не видно что он взял sdb
